STUFFED SHELLS 
1 (16 oz.) jumbo shell macaroni (about 40)
4 c. ricotta cheese
1 (8 oz.) Mozzarella cheese
2 eggs
1/3 c. dried bread crumbs
1/4 c. chopped parsley
1 tsp. salt
1/4 tsp. pepper
1/2 c. grated Parmesan cheese
Spaghetti sauce
Italian sausage - out of casing - 1 lb. (opt.)

Prepare spaghetti sauce. Prepare shells as package directs. Drain in colander. Preheat oven to 350 degrees. In large bowl combine ricotta and next 6 ingredients (7 if using sausage - cook before). Stuff shells with mixture.

Spoon 3/4 of sauce into pan (13 x 9 inch). Place shells, seam side down, over sauce in one layer. Spoon remaining sauce over shells. Top with Parmesan. Bake 30 minutes. Makes 10 servings.
