SMOTHERED CHICKEN 
1 frying size chicken, cut up
Season with salt, pepper and roll in flour

In heavy skillet, put 1/2 cup oil, and heat until skillet is hot. Put in chicken, and brown on all sides, remove chicken to baking pan. Stir in enough flour to drippings in skillet for gravy, when brown add enough water to make gravy. Pour over chicken in pan. Bake in 300 degree oven for 1 hour or until chicken is tender, if gravy is too thick, add water to thin.

This was pretty good for a basic recipe, I added more seasonings, and instead of water for the gravy portion, I did chicken stock, it was very good.
