HAMBURGER STROGANOFF 
1/4 c. butter
1/2 c. minced onion
2 tbsp. flour
1-2 lbs. ground beef
1/4 tsp. pepper
1/4 tsp. paprika
2 tsp. salt
1 (4 oz.) can undrained chopped mushrooms
1 can cream of chicken soup
1 c. sour cream OR 1 (8 oz.) c. plain non-fat yogurt

Melt butter in skillet. Saute onions until golden. Stir in meat. Brown meat and drain off fat. Add flour, salt, pepper, paprika, and mushrooms; saute for 5 minutes. Add soup.

Simmer uncovered 10 minutes. Stir in sour cream or nonfat yogurt. Sprinkle with paprika and serve over rice or noodles. Yield 4-6 servings.
