CREAMY RICE PUDDING 
1/2 c. reg. rice (not converted)
2/3 c. sugar
1 tsp. vanilla
1/2 tsp. salt
1 qt. milk
2 eggs

In a large heavy saucepan combine rice, sugar, vanilla, salt and milk. Cover and bring to a simmer over medium heat. Simmer until rice is very tender, about 40 minutes. Remove from heat. Beat eggs to mix. Slowly pour about 1/3 of rice mixture into eggs, beating. Pour this mixture back into saucepan. Over low heat, stir constantly until mixture coats back of spoon. Remove from heat. Let cool and serve. Top with strawberry jam or cinnamon and sugar.
