WATERMELON RIND PICKLES 
Dice watermelon rind. Weight and use same amount of sugar. Soak in lime water 2 hours. One cup lime to a gallon of water; drain and rinse. Bring to boil in fresh water until cubes are tender (about 30 minutes). Pour this water off. Mix 2 cups vinegar to 1/2 teaspoon oil of cloves and 1/2 teaspoon oil of cinnamon and sugar.

Bring to boil and pour over pickles. Let stand overnight and bring to a boil each morning for 3 days. Third day pour in jars. Use white vinegar.
