FRESH CRAB ON MUFFIN 
1/2 lb. fresh crab
4 halves of English muffins (serves 2 people)
1/2 c. mayonnaise, more if needed to mix crab
Enough grated Cheddar cheese to cover muffins

Butter muffins. Toast lightly. Mix crab with mayonnaise; save 4 large pieces for tops of muffins for garnish. Put crab on toasted muffins and cover with grated cheese and top with large piece of crab. Broil lightly. This is very filling and will serve as a main meal with a salad.
