PECAN MUFFINS 
1 1/2 c. flour
1/2 c. sugar
1/2 c. pecans
2 tsp. baking powder
1/2 tsp. salt
1 egg, beaten
1/2 c. milk
1/2 c. vegetable oil

Combine first 5 ingredients. Stir well and set aside. Combine egg, milk and oil. Make a well in center of dry ingredients. Pour in liquid. Stir until moist. Fill greased muffin pans 2/3 full. Bake at 400 degrees for 20 to 25 minutes.
