CREAM OF BROCCOLI SOUP 
2 c. chopped broccoli
1/4 c. chopped onion
2 c. chicken broth
1 c. mashed potatoes
1 c. heavy cream
2 tbsp. butter
1 tsp. salt

Wash broccoli and trim off tough stem. Peel remaining stem and chop finely. Put chopped broccoli in saucepan with chicken broth. Cook about 5 minutes until tender. While broccoli cooks, saute onion in butter.

Remove broccoli from heat. Take 1 cup broccoli from pan and put into food processor with onions. Process until smooth. Add to broccoli in saucepan. Stir in potatoes, cream, salt. Add milk until you have desired consistency.
