PORK WITH CIDER 
1 1/2 lb. lean boneless pork, cut into 1 inch cubes
1/3 c. vegetable oil
1/3 c. flour
1 1/2 c. apple cider or juice
1/3 c. pineapple juice
1/3 c. mandarin orange juice
Desired amount of pineapple and mandarin orange chunks
3 carrots, sliced
1/4 tsp. rosemary
1 bay leaf
1/2 tsp. salt
1/2 tsp. pepper

Thoroughly dredge pork with flour and heat oil in fry pan until hot. Carefully add pork; cook until brown on all sides. Remove and drain on paper towels. Put in casserole; add cider and juices and all other ingredients. Bake at 325 degrees for 2 hours, until meat is tender. Serve with mashed potatoes or biscuits.

PORK WITH CIDER LEFTOVER CASSEROLE:

With any leftover sauce, add Hillshire Farm sausage or cheddar brauts, sliced. Serve over or with Rice A Roni noodles in alfredo sauce.
