ARTICHOKES AND HAM ALFREDO 
1/4 c. butter
1/2 tsp. minced garlic
1 can (8 1/2 oz. drained weight) water-packed artichoke hearts, drained and quartered
8 oz. cooked ham, cut in 1/4 inch thick strips (2 c.)
3/4 c. half and half
Yolk from 1 lg. egg
12 oz. fettuccine, freshly cooked and drained
1/2 c. grated Parmesan cheese

Melt butter in a medium-size saucepan over medium-low heat. Add garlic, artichokes and ham; stir to coat with butter. Reduce heat to low, cover and cook 5 minutes or until artichokes and ham are hot.

Meanwhile with a fork beat half and half with egg yolk until well blended. Pour over hot fettuccine in serving bowl. Add Parmesan cheese, toss to coat. Add artichokes and ham; toss again. Serve immediately. Makes 4 servings. Per serving: 373 cal, 19 g pro, 6 g car, 31 g fat, 180 mg chol, 1, 113 mg. sod.
