PINEAPPLE PECAN LOAF 
3/4 c. brown sugar
1/2 c. butter
1 egg
2 c. flour
1 tsp. baking soda
1/4 tsp. salt
1/3 c. fresh orange juice
1 (8 oz.) can crushed pineapple & its liquid
1 c. chopped pecans
1 tbsp. grated orange rind

Cream sugar and butter. Add egg and beat well. Sift flour before measuring. Sift again with dry ingredients. Add alternately with orange juice, mixing just to moisten. Fold in undrained pineapple, pecans and orange rind.

Pour into well greased 8 1/2 x 4 1/2 inch loaf pan. Bake in 350 degree oven for about 1 hour. Cool before wrapping. Makes 1 loaf.
