HALIBUT 
2 lbs. halibut
1/4 c. butter
2 tbsp. chopped green onions
1/4 c. chopped mushrooms
1/4 c. flour
1/2 tsp. salt
White pepper
1 3/4 c. milk
3 tbsp. sherry
1 1/2 c. Cheddar cheese
1/4 c. bread crumbs, browned in 1 tbsp. butter

Cut halibut in bite size and place in pan with 4 cups cold water, 1 1/2 teaspoon salt, 4 peppercorns, 1/4 cup vinegar, 2 slices lemon, 1 slice onion, and parsley. Cover; bring to boil. Simmer 3 minutes. In pan, saute onions and mushroom; blend in flour, salt, and pepper. Add milk until thickened. Stir in cheese and heat. Add halibut. Cover with bread crumbs. Bake at 400 degrees for 10 minutes. Serves 6.
