CHEESE AND SPINACH
TRIANGLES/TIROPETES
 
1 lb. fillo dough
1 lb. melted butter
1 lb. Feta cheese, crumbled
1/2 tsp. dill
Salt
2 cloves garlic, finely chopped
6 eggs, beaten
1/4 c. minced parsley
3 lbs. fresh spinach, washed, dried & chopped (frozen spinach will work if in a hurry - use 2 boxes)
2 bunches scallions, chopped
1/2 c. olive oil

Brown scallions and garlic in oil until tender. Combine spinach, parsley, dill, beaten eggs and cheese. Add cooked scallions and garlic; season with salt lightly and mix well. Lightly grease cookie sheet. Cut fillo into 3 inch strips and brush with melted butter. (Keep fillo covered with damp cloth until used.) Place 1 teaspoon of mixture at bottom of each strip. Fold the corner up to form a triangle. Use entire strip. Continue this method until all the ingredients are used. Place triangles on cookie sheet and bake in 375 degree oven for 15 to 20 minutes, until golden brown. Triangles may be prepared ahead of time, frozen and baked when ready to serve. Enjoy!
