BROCCOLI CORN BREAD 
1 pkg. Jiffy corn bread mix
1 lg. onion chopped fine or 1/2 tbsp. dry onion
1 c. grated sharp cheese (packed)
1/2 stick butter, melted
2 eggs, well beaten
1 tsp. salt
1 tsp. baking powder
1 pkg. broccoli

Cook frozen broccoli for 10 minutes in boiling water. Drain and cool. Add salt and baking powder to corn bread mix, then add cheese, eggs, onions, cooled broccoli and melted butter. Mix by hand. Add enough milk to make soft cake batter mixture.

Bake in well greased loaf pan or long baking dish. Baking dish holds about 2 1/2 quarts. Cook about 45 minutes at 400 degrees. Make sure it is brown on top and bottom. Very good.
