CHICKEN QUICHE 
1 partially baked 9" pie crust
2 tbsp. minced shallots or green onions
3 tbsp. butter
1/2 lb. sliced fresh mushrooms
1/4 tsp. salt
1 tsp. lemon juice
1 whole chicken breast, poached & cut into 1" cubes
3 eggs
1/2 c. whipping cream
1/2 tsp. tarragon
1/4 c. grated Swiss cheese
1 tbsp. butter, cut into pea sized cubes

Poach chicken in water or stock to which you have added a half onion and a celery stalk with leaves. Cook the shallots or onions and mushrooms in the butter in a heavy bottomed saucepan until soft. Add lemon juice, mix in chicken and set aside.

Lightly beat the eggs, cream and tarragon, add the chicken and mushroom mixture and pour into partially prepared pie crust. Sprinkle with cheese, dot with butter and bake at 375 degrees for 25 to 30 minutes. Serves 6.
