WET BOTTOM SHOOFLY PIE | |
3/4 c. corn syrup 1/4 c. molasses 1 c. boiling water 1 egg, beaten 1 tsp. baking soda TOP: 1 c. sifted flour 2/3 c. brown sugar 2 tbsp. shortening 1/2 tsp. cloves 1/2 tsp. cinnamon 1 (9 inch) pie crust To prepare bottom: In a medium sized mixing bowl, combine syrup, molasses, and boiling water. Stir in baking soda. Beat a little molasses mixture into beaten egg. Then stir back into mixing bowl to prepare top part. To prepare top: Mix together flour, shortening, spices, and sugar with coarse crumbs. Mix 1 cup crumbs into molasses mixture. Pour into pie crust. Sprinkle remaining crumbs over top. Bake in 400 degree oven for 25 minutes or until crust is lightly browned and filling is fluffy. Cool before serving. |
