PORK SALAD WALDORF 
1/2 c. mayonnaise
2 c. celery, julienne cut, blanched
2 lg. apples
1/2 c. walnuts
1/2 tsp. Worcestershire sauce
24 oz. pork, cooked, diced
1/2 tsp. Dijon mustard
1 parsley sprig
1/2 lemon
1 head Boston Bibb lettuce
Salt
Pepper
3 cranberries, fresh

Peel and core the apples and dice into 1/2-inch cubes and place in mixing bowl. Add celery and lemon juice and mix well. Add the pork, Dijon mustard, salt and pepper to taste, walnuts, Worcestershire sauce, and mix well.

Add the mayonnaise and gently fold everything together. Transfer to a serving bowl and garnish with parsley sprig, cranberries, and sprinkle with walnuts. Serve on a bed of Bibb lettuce. (Prep and Cooking Time: 30 minutes)
