JEWELED BANANA BREAD | |
1 c. brown sugar, dark 1/2 c. soft butter 2 eggs 1 tbsp. lemon juice 1/2 tsp. lemon rind 1 1/2 c. mashed banana 2 c. flour 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1/2 c. nuts, chopped 1/2 c. chocolate chips 1/4 c. candied cherries Cream sugar, butter. Add eggs, one at a time. Stir in the lemon juice, lemon rind and mashed banana. Sift flour, soda, salt and cinnamon; mix with the creamed mixture. Fold in the nuts, chocolate chips and cherries. Pour in a 9 x 5 x 3 inch pan. Bake at 350 degrees for 55 minutes or until it tests done. For variation you may use coconut flakes, raisins, snipped dates, chopped prunes or cranberries. |
