MUSHROOM AND ONION EGG BAKE 
1 tbsp. vegetable oil
4 green onions, chopped
4 oz. mushrooms, sliced
1 c. low-fat cottage cheese
1 c. sour cream
6 eggs
2 tbsp. salt
1/8 tsp. fresh ground pepper
Dash hot pepper sauce

Preheat oven 350 degrees. Grease pan.

Heat skillet over medium heat, add onions and mushrooms. Cook until tender (set aside).

Blend cottage cheese until almost smooth, add sour cream, eggs, flour, salt, pepper and hot sauce. Pour into greased pan, stir in onions and mushrooms.

Bake about 40 minutes.

Makes about 6 servings.
