BANANA BREAD 
2 c. sugar
1 c. butter
6 ripe bananas
4 eggs
2 1/2 c. cake flour
2 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
Walnuts, chopped (optional)

Cream butter and sugar, add eggs and bananas. Sift dry ingredients together and add to wet, being careful not to overmix. Add vanilla and nuts, if desired. Bake in two lightly greased loaf pans at 350 degrees for 45 to 60 minutes, or until centers are firm and edges begin to pull away. Cool ten minutes before removing from pans.
