MUSHROOM BARLEY SOUP 
1 pkg. barley
1 lb. mushrooms, sliced
1 onion, chopped
2 cloves garlic, minced
2-3 tbsp. brown rice miso
Water

Cook barley by boiling in a large pot of water until tender. This usually takes about 30-45 minutes. Meanwhile saute onions and garlic in a little oil. Add mushroom and cook slightly. Drain barley. Add to onion mixture. Add water to cover (about 1-2 inches above). Mix in miso. Cover and cook on low about one hour. If water evaporates, you can add more, just taste it after to see if you need more miso.
