ONE PAN BANANA BREAD 
1/3 c. vegetable oil
1 1/2 c. mashed ripe bananas
1/2 tsp. vanilla
3 eggs
2 1/3 c. biscuit or Jiffy baking mix
1 c. sugar
1/2 c. chopped nuts

Heat oven to 350 degrees. Generously grease bottom of loaf pan, 9 x 5 x 3 inches. Stir all ingredients in pan with fork until moistened; beat vigorously 1 minute. Bake until wooden pick inserted in center comes out clean, 55-65 minutes. Cool 5 minutes. Run knife or metal spatula around sides of loaf to loosen; remove from pan. If loaf sticks, use knife or metal spatula. Yields 1 loaf.
