FRANCES V. HOLMES' MELON
(CANTALOUPE) PIE
 
1 lg. ripe melon, peeled and cut in sm. pieces (at least 2 c.)
1/2 c. water
1/2 c. sugar
1/4 tsp. nutmeg
1 tbsp. butter

Cook until very tender, then mash it up. Add 1/2 cup sugar mixed with 4 tablespoons flour with 2 egg yolks beaten in it. Cook until thickened. Pour into baked pie shell. Cover with meringue and bake in oven at 400 degrees until delicate brown - watch closely. Or you can use Cool Whip when pie is cool.
