JAM PUFFINS 
2 eggs
1/2 c. brown sugar
1/2 c. butter, melted
1 1/4 c. buttermilk
1 tsp. vanilla
1 c. whole wheat flour
1 c. cake flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
Jam (strawberry or raspberry)

Mix eggs, brown sugar, butter, buttermilk, and vanilla in large bowl. In medium bowl, combine flours, baking powder, baking soda, and salt. Combine wet and dry mixtures and fold together until just mixed. Spoon into prepared muffin tins (2/3 full). Place 1 teaspoon jam on each muffin and press lightly with spoon. Bake at 400 degrees for 20 minutes. Remove from pan and cool on rack.
