DELIGHTFUL CHEESE PIE 
8 graham crackers, crushed
1 tsp. cinnamon

Mix graham crackers and cinnamon well. Spread over the bottom of a 9 inch pie pan that has been sprayed with non-stick pan spray. Set aside in refrigerator.

FILLING:

1 env. unflavored gelatin
1 (3 oz.) pkg. lemon flavored gelatin, made with Nutra-Sweet
Juice and rind of 1 small lemon
3 packets Equal sweetener
3 packets Sweet 'N Low sweetener
1/4 c. cold water
1 c. boiling water
1/4 c. plain, low-fat yogurt
2 c. low-fat cottage cheese

Combine cold water with lemon juice and rind. Sprinkle unflavored gelatin and lemon gelatin over cold water and lemon juice mixture. Allow to stand until gelatin is softened. Add boiling water and stir until gelatin is completely dissolved. Allow to cool 5 minutes. While gelatin mixture is cooling, combine sweeteners, yogurt, and cottage cheese in blender or food processor and blend until almost smooth. Add gelatin mixture and continue until completely smooth. Pour into crust and chill until firm.
