CUCUMBER & ONION SALAD 
1 lg. cucumber, peeled & thinly sliced
2 c. water
1 tbsp. salt
1 sm. onion, thinly sliced & separated into rings
1/2 c. sugar
1/2 c. distilled vinegar
1/4 tsp. chopped fresh parsley
1/4 tsp. salt
1/8 tsp. pepper

Combine first 3 ingredients in a medium bowl. Let soak for one hour. Drain well. Add onion; set aside.

Combine remaining ingredients in a jar. Cover tightly and shake vigorously. Pour marinade over vegetables. Toss gently, cover and chill 30 minutes.
