BANANA-PECAN BREAD | |
1/2 c. light brown sugar, packed 3 tbsp. granulated sugar 1/3 c. vegetable oil 2 eggs, lightly beaten 1 3/4 c. all-purpose flour 2 tsp. baking powder 1/2 tsp. salt 1/4 tsp. baking soda 1/2 tsp. allspice 3 ripe bananas, mashed 3/4 c. coarsely chopped pecans Beat the sugars and oil until blended. Add the eggs and beat until smooth. Sift together the dry ingredients and add to the sugar mixture, beating. Fold in the bananas and pecans. Pour the batter into a greased 9 x 5-inch loaf pan. Bake in a preheated 350°F oven until set, about 1 hour. Cool briefly in the pan, then transfer to a rack to cool completely. Makes one 9-inch loaf. |
