PEELED FIG PRESERVES 
4 lb. ripe figs
3 lb. sugar

Peel figs; place in large shallow dish. Pour sugar over figs. Let stand for about 2 hours or until syrup begins to form. Cook fig mixture over medium heat until fruit changes color and syrup thickens. Stir occasionally at beginning of cooking process, and frequently as preserves begin to thicken. Pack into sterilized jars and seal. Yields 5 pints.
