ROMA MEAT ROLL 
1 1/2 lb. ground chuck
1 egg
3/4 cup cracker crumbs
1/2 cup finely chopped onions
2 (8 oz. ea.) cans tomato sauce with cheese, divided
1/2 tsp. salt
1/2 tsp. oregano
1/8 tsp. pepper
2 cups shredded Mozzarella cheese

Combine ground meat, egg, cracker crumbs, onion, 1 can tomato sauce with cheese, salt, oregano and pepper. Mix well and shape into a flat rectangle about 10 inches by 12 inches on parchment or wax paper. Sprinkle Mozzarella cheese evenly over meat mix.

Roll up like a jelly roll and press ends of roll to seal. Place in a shallow baking dish.

Bake at 350°F for 1 hour. Drain off excess fat. Pour on remaining can of tomato sauce and bake for 15 minutes more.
