SAUSAGE AND CRUSHED TOMATOES
WITH PENNE PASTA
 
1 lb. bulk sausage
1 onion, chopped
28 oz. can crushed tomatoes
1/3 c. dry red wine
1/2 tsp. red pepper (flakes)
2 tsp. marjoram
1 tbsp. olive oil
Penne or Ziti pasta, cooked (for 4)
Parmesan cheese

Saute onions in olive oil in 3 quart heavy saucepan until clear. Add sausage and brown. When brown, add red pepper and 1/3 cup wine. Boil briskly until most of liquid is absorbed. Add tomatoes and marjoram, simmer for 20 minutes. Toss with cooked pasta and pass Parmesan separately.
