CHOCOLATE PECAN BOURBON PIE 
2 eggs
1 c. sugar
1/2 c. butter, melted
4 tbsp. bourbon
1/4 c. cornstarch
1 c. pecans (finely chopped)
6 oz. pkg. semi-sweet chocolate chips

Beat eggs slightly. Add sugar gradually. Add melted butter and bourbon and mix well. Blend in cornstarch. Add pecans and chocolate chips. Pour into unbaked 9 inch pastry shell. Bake in preheated 350 degree oven for 45 to 50 minutes. Cool about 1 hour before serving. Serve with Mellow Whipped Cream.

MELLOW WHIPPED CREAM:

1/2 c. whipping cream
2 tbsp. confectioners' sugar
1 to 2 tsp. bourbon

Whip the cream. Fold in the sugar and the bourbon.
