YAM CHIPS 
Slice washed sweet potatoes thinly (2 lg.)

Fry in hot peanut oil until edges curl. Drain on heavy brown paper. Transfer to clean brown paper bag. Salt lightly and place bag in warm oven for 10 minutes. Serve immediately with sauces: plum sauce, fruited ketchup or chili sauce mixed with a little marmalade.
