CHICKEN CORDON BLEU 
4 whole chicken breasts, split, boned, skinned
8 (1 oz.) slices cooked ham
8 (1 oz.) slices Swiss cheese
3 tbsp. fresh parsley
1/4 tsp. pepper
1 egg, beaten
1/2 c. Italian bread crumbs
1/4 c. butter
1 (10 3/4 oz.) can mushroom soup
1 (8 oz.) sour cream
1 (4 oz.) can sliced mushrooms, drained
1/3 c. lemon juice

Place each chicken breast half on sheet of waxed paper, flatten to 1/4" thickness, using a meat mallet or rolling pin. Place 1 slice of ham and 1 slice of cheese in center of each chicken piece. Sprinkle evenly with parsley and pepper. Roll up lengthwise, secure with wooden picks. Dip chicken in egg, coat well with crumbs. Melt butter, brown chicken on all sides. Remove chicken to 12"x8"x2" baking dish, reserving drippings. Add rest of ingredients; stir well. Pour over chicken. Bake at 350 degrees for 40 to 45 minutes. 8 servings.
