MINIATURE CHEESECAKES 
18 vanilla wafers
3 (8 oz.) pkgs. soft cream cheese
1 1/4 tsp. grated lemon rind
3 eggs
3/4 c. sugar
1 tbsp. lemon juice
3/4 tsp. vanilla
Fruit jam or preserves

Place wafers, flat side down in 18 paper lined baking cups. Combine cheese, sugar, juice, peel and vanilla, mixing at medium speed until well blended. Add eggs, one at a time, mixing well after each addition.
