FROG EYE SALAD 
1 box acini ditepi, found in the pasta section
1 c. sugar
2 tbsp. flour
1/2 tsp. salt
2 beaten eggs
1 3/4 c. pineapple juice
1 tbsp. lemon juice
3 cans (11 oz.) mandarin oranges
2 cans (20 oz.) pineapple chunks, save liquid
1 can crushed pineapple, save liquid
1 c. mini marshmallows
1 (8 oz.) Cool Whip

Put acini ditepi into pan; add water and boil until tender. Drain and set aside. In a separate pan add sugar, flour, salt, egg and pineapple juice. Cook over medium heat until slightly thickened. Remove from heat. Add lemon juice, then let cool. When cool add egg mixture to acini ditepi. Put into refrigerator overnight.

The next day add oranges, pineapple, marshmallows and Cool Whip. Serves a very large crowd!
