DATE APPLE COFFEE BREAD 
1 tbsp. instant coffee crystals
1 c. boiling water
1 1/3 c. snipped, pitted dates
2 1/4 c. all-purpose flour
3/4 c. packed brown sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1 beaten egg
2 medium apples, peeled, cored, and shredded (1 c.)
1/2 c. chopped walnuts
2 tbsp. butter

Dissolve coffee crystals in boiling water; pour over dates. Set aside. In a large mixing bowl, stir together flour, brown sugar, baking powder, salt, and soda. Combine egg, shredded apple, walnuts, butter, and coffee-date mixture. Add to flour mixture, stirring just until mixture is moistened. Turn into a greased 9 x 5 x 3 inch loaf pan. Bake in a 350 degree oven for 60 to 65 minutes or until a wooden pick inserted into center comes out clean. Cool in pans 10 minutes. Remove from pan; cool on a wire rack.
