CRACKLING CORNBREAD 
1 c. cornmeal
1/2 c. all-purpose flour
1/4 c. sugar
2 tsp. baking powder
1/2 tsp. salt
3/4 c. milk
1 egg
1/2 c. cracklings
1/4 c. shortening, melted

Combine cornmeal, flour, sugar, baking powder and salt. Stir in milk and egg. Gradually stir in cracklings and shortening. Pour batter in a greased 8 x 8 x 2-inch square pan, muffin pan or corn stick pan.

Bake in a 400°F oven for 25 to 30 minutes.

Note: Render salt pork to make cracklings, by putting salt pork in a frying pan and cook, stirring frequently, until crispy.
