HI PRO LOW CAL PANCAKES 
3 eggs
1 c. cottage cheese (use low fat if possible)
1 1/3 c. skim milk
1 c. flour (may use blends)
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. baking powder

SYRUP:

1 c. juice
1 tbsp. cornstarch
1 pkg. plain gelatin

Blend first 3 ingredients in blender. Mix dry ingredients and add to liquids in blender. Pour onto griddle and cook. Serve with unsweetened applesauce or other sugar free fruit syrup.

Syrup: Mix 1 cup unsweetened fruit juice or fruit juice concentrate with 1 tablespoon cornstarch or Arrowroot and heat until clear and thick. May add 1 package plain gelatin which has been softened in 2 tablespoons cold water.
