WIDOW'S QUICHE 
1/2 c. mayonnaise
2 tbsp. flour
2 eggs, beaten
1/2 c. milk
1 1/2 c. diced crab, shrimp, ham or bacon (all should be pre-cooked)
6 to 8 oz. Swiss or Jack cheese, grated
1/3 c. green or yellow onion, diced
1/8 tsp. nutmeg
Parsley flakes

Prepare a pastry crust. Do not pre-bake. In a large mixing bowl, combine the mayonnaise, flour, eggs, and milk. Add the rest of the ingredients except parsley. Swiss cheese is recommended for seafood, Jack cheese for ham or bacon. Lightly blend mixture, then pour into unbaked pie crust. Sprinkle with parsley flakes. Bake in preheated oven at 350 degrees for 40 to 45 minutes. Serves 6 to 8.
