CHOCOLATE MERINGUE FINGERS | |
I've been saving my egg whites for this one! 2 egg whites 1 sq. unsweetened chocolate grated 1/2 c. sugar 1/4 c. cornflake crumbs (Rice Crispies or Wheaties) 1/4 tsp. vanilla Preheat oven to 275 degrees. Beat egg whites until foamy. Add 1/4 cup of the sugar. Beat until stiff. Fold in the remaining sugar, chocolate, crumbs and vanilla. "Blop" onto ungreased cookie sheets. Bake 40 minutes. Turn off oven and cool with door closed (all night). Melt 6 oz. semi sweet chocolate chips. Flex cookie sheet to loosen cookies. Dip end of cooled cookie into chocolate. Place on waxed paper until hard. Makes about 3 dozen. Recipe can be doubled. |
