CHEESE SOUP 
1/2 stick butter
3 carrots
3 stalks celery
1 onion
2 cans chicken broth
2 cans cream of potato soup
1 lb. Velveeta cheese
1 (8 oz.) sour cream

Chop carrots, celery and onion. Saute in butter. Add chicken broth; simmer 30 minutes. Add potato soup and cheese. Simmer 10 minutes. Add sour cream.
