CHALUPA 
2-3 lb. pork loin roast
1-2 lb. pinto beans
2-3 cans peeled, roasted and diced
Green chilies (if you can't find roasted ones plain green chilies will do)
3 tbsp. chili powder
3 tbsp. ground cumin
3 tbsp. ground oregano
5-6 cloves garlic, chopped
Salt and pepper to taste
Dorito chips

Put roast in large container with washed pinto beans. Add green chilies, chili powder, cumin, oregano, and garlic. Salt and pepper to taste. Cover with enough water to cover. Cover container and cook on low heat 4-6 hours. Add water as needed, remove bone and cook until roast is shredded. When the roast is shredded (may have to do by hand) let cool until thickened. It will scorch fast at this stage so stir often.

When ready to serve, crumble Dorito chips on plate. Cover with meat and bean mixture. Add chopped tomato, shredded lettuce, diced onion, shredded longhorn cheese and chopped avocado. Can top with salsa, if desired. Recipe can be doubled to serve 20 or more. Chalupa can be frozen but will need more seasoning when thawed.
