LEMON SQUARES 
1 c. all-purpose flour
1/2 c. butter, softened
1 c. granulated sugar
1/4 c. powdered sugar
2 tsp. grated lemon peel (optional)
2 tbsp. lemon juice
1/2 tsp. baking powder
1/4 tsp. salt
2 eggs

1. Heat oven to 350 degrees.

2. Mix flour, butter and powder sugar in small bowl, press evenly with hands in bottom about 5/8 inch up sides of an ungreased square pan, 8 x 8 x 2 inches (if dough is sticky flour fingers). Bake 20 minutes.

3. Beat remaining ingredients on medium speed until light and fluffy. Pour over hot crust.

4. Bake about 25 minutes. Cool. Cut into 1 1/2 inch squares.
