LOUISIANA RED BEANS AND RICE 
1 or 2 ham chunks, fairly lean
1 lb. dried red beans (or kidney, pinto beans)
1 lg. onion, chopped
1 c. chopped green onions, top and bottoms
1/4 c. chopped bell pepper
1/4 c. chopped parsley
1/2 tsp. basil
2 bay leaves
Salt, garlic powder, cayenne pepper to taste
1 lg. pkg. rice (Minute Rice cooks quicker)

Soak beans in water overnight. Then next morning drain water, add fresh water to beans and all the above ingredients. Bring to boil, reduce heat and cook on low at least 3 hours or until beans are soft and creamy.
