RHUBARB CUSTARD PIE 
1 1/2 c. sugar
1/4 c. flour
1/4 tsp. ground nutmeg
Dash of salt
3 eggs, beaten
4 c. 1" slices rhubarb
Pastry for pie

Mix sugar, flour, nutmeg and salt together. Add this to the beaten eggs; beat until smooth. Stir in rhubarb.

Prepare pastry for 9 inch lattice top pie. Line pie plate with pastry. Fill with rhubarb mixture. Dot with 2 tablespoons butter. Adjust lattice top (slices of rolled pastry dough). Bake at 400 degrees for 50 minutes.

Be sure pie plate is big enough or it may overflow. To be careful, put pie plate on a cookie sheet to catch any juice overflow. Goes well with vanilla ice cream on the side.
