CREAM OF CARROT SOUP 
1/3 c. celery, finely chopped
1/3 c. onions, finely chopped
1 c. carrots, finely chopped
3 tbsp. butter
3 tbsp. flour
3 c. chicken broth
1/3 c. rice
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. thyme
1/2 tsp. nutmeg
1/2 tsp. turmeric
1 c. Half & Half

Saute onion, celery, carrots for 5 minutes. Add flour, mix well. Add broth. Bring to a boil. Add rice and rest of ingredients. Simmer 20 minutes. Add Half & Half, heat and serve.
