TOASTED COCONUT CAKE AND
FROSTING
 
1 box yellow cake mix
1 pkg. vanilla instant pudding mix
1 1/3 c. water
4 eggs
1/3 c. oil
2 c. coconut
1 c. chopped walnuts or pecans

Blend cake mix, pudding mix, water, eggs and oil in large bowl. Beat at medium speed with electric mixture for 4 minutes. Stir in coconut and nuts. Pour into greased and floured 13"x9" pan. Bake at 350 degrees for 35 minutes.

Cool in pan 15 minutes; top with coconut cream cheese frosting.

FROSTING:

1 box powdered sugar
1 (8 oz.) pkg. cream cheese
1 tsp. vanilla
2 tbsp. butter
1/4 c. milk

Mix all ingredients, spread over cool cake. Then, melt 2 tablespoons butter in skillet. Add 2 1/2 cups coconut, stir constantly over low heat until golden brown. Let cool, sprinkle over cake.
