BUTTERSCOTCH OATMEAL COOKIES 
1 c. shortening
3/4 c. brown sugar
3/4 c. white sugar
2 eggs
1 tbsp. hot water
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking soda
2 c. quick oatmeal
1 (6 oz.) pkg. butterscotch chips
1/2 c. chopped nuts

Preheat oven to 375 degrees. Cream shortening and sugars. Add eggs and beat well. Add hot water and vanilla. Add flour mixed with soda. Next, add oatmeal, nuts, and chips. Mix well. Drop by teaspoons on greased cookie sheet. Bake 10-12 minutes at 375 degrees.
