TANGY MIXED SALAD 
1 lg. carrots, peeled and chopped
1 celery stalk, peeled and chopped
1 green apple, peeled and chopped
1 med. orange, peeled
4 tbsp. raisins
2 tbsp. pine nuts
1 head butter lettuce
Fresh mint or orange twists for garnish

DRESSING:

1/2 c. plain low fat yogurt
4 tsp. honey
1 tbsp. lemon juice
Pinch of cinnamon
Nutmeg

1. In a mixing bowl combine dressing ingredients. Whisk until thoroughly mixed.

2. Wash and trim lettuce leaves. Drain. Pat dry. Do not tear leaves.

3. In a large bowl, combine fruits, vegetables, raisins and pine nuts. Add dressing. Toss.

4. Place one or more lettuce leaves on each individual plate. Scoop salad onto leaves. Garnish with fresh mint leaves or orange twists.
