RICE PUDDING 
3 eggs
1 1/2 tsp. real vanilla
1/2 c. UNCLE BEN'S® converted rice, cooked according to pkg. directions
Cinnamon
1/3 c. sugar
3 c. milk
Nutmeg

Beat together eggs, sugar and vanilla. Mix together with milk, raisins, and cooked rice. Put into buttered casserole and sprinkle top with cinnamon and nutmeg. Bake at 325 degrees about 35 minutes or until a knife inserted near the center comes out clean. Do not bake too long as the custard becomes watery.
